Orange, almond, cardamom:
Roasted almond and harrisa Foccacia bread Orange cardamom salt, olive oil
3 cups water
2 oz harrisa paste
3 oz compressed yeast
6 cups flour
½ cup sliced almonds
3 oz orange, almond, cardamom sea salt
3 oz olive oil
1 oz salt
For the foccacia bread mix the water and yeast together in a large mixing bowl. Add 1 oz of the olive oil, the harrisa paste and the salt. Mix in 5 cups of the all purpose flour and knead until a dough is formed. P lace the dough in an oiled mixing bowl and cover until dough has doubled in size. Punch dough down and roll out into a 9in X11in and place on a greased cookie sheet. Let dough rise to the rim of the cookie sheet and then sprinkle the sliced almonds and orange, cardamom sea salt on top of dough and bake at 400 degrees for 12 min. Turn cookie sheet and bake for an additional 12 min. Take out of oven, cool and cut into desired size and dip in olive oil to eat.
